"Can you tell me more about it?" is one I use a lot. But sometimes people don't really tell you why - which is the core that we're trying to get to. So it takes a few more tries for them to tell us exactly what we're looking for. "Help me understand why" explicitly tells them that we're looking for "why", not "how" or "what".
